dc.description.abstract |
Our work focused on several genera of lactic acid bacteria, three pathogenic
bacteria and a strain of Candida albicans. These lactic acid bacteria have been tested
against each other and against pathogenic strains
Leuconostoc inhibits each other in 85% of cases and inhibited pathogenic bacteria
in 91% of cases. Candidaalbicans was not inhibited by any strain of Leuconostoc. Several
inhibitions were observed on MRS medium, but none on Mayeux medium.

order as inhibitions due to lactic acid bacteria.
Leuconostocs have a greater inhibitory power on pathogenic bacteria compared to
lactococcus and enterococci. These last two genera showed an inhibitory effect only
against E.coli and Staphylococcus aureu
The well diffusion method made it possible to observe inhibitions against
lactococci and pathogenic bacteria caused by leuconostocs and enterococci. The
leuconostocs, enterococci and lactococci tested against each other did not show any
inhibitory effect.
The results of the inhibitory effects existing between lactic acid bacteria make it
possible to consider the combination of leuconostoc and lactococcus strains for the
development of mixed ferments. |
