dc.description.abstract The volatility of world prices has weakened the Algerian dairy policy, in terms of State intervention in the regulation of the sector. Despite the liberalisation of transformation and distribution of most dairy products, the state continues to intervene at all levels of the sector both through direct aid and in the form of premiums and in the regulation of the price of recombined milk; a staple food for the majority of the population, whose demography is growing at a frantic pace. The analysis of the dairy sector revealed the weakness of milk production, which is explained by the very low rate of integration of raw milk into the LPC compared to the processing system. The state-subsidised milk powder (allocated to dairies by ONIL) must be used exclusively for the manufacture of reconstituted milk mixed with cow's milk. The quantities of milk integrated with reconstituted milk are closely linked to the control criteria (% fat, % ESD and % EST) of the LPC with the following objectives: - Reconciliation of the data from the analysis reports with the data from the integration report; - Establish a correlation between the quantities of collected milk integrated with the milk powder in the context of a simplified material balance; - And to check whether or not there is a correlation between the quantities declared integrated and the analyses carried out. According to the results of analyzes of the pasteurized milk pakcaged during the first quarter of 2019 calculated are significantly higher than the states of analysis and the recommended standards with respectively variable fat contents of(17 to 32g/l) vs 15g/l in MG, from (67to 82g/l) vs 83g/l in ESD AND (99 to 101g/l) vs 98g/l in EST. en_US
