The suitability of milk for processing is a problem for the milk producer and the
processor. The producer will have to provide the processor with milk that will meet his
expectations and the processor will have to have criteria for rapid judgment of the functional
properties. The amount of the derivatives produced from a known quantity of milk is also of
great economic importance for the dairy industry. In this study it is called to test the
repeatability in the time of the milk processing aptitude tests (tests used on individual milks
(of potential breeders) received at the Giplait-Esahel dairy, try to explain these aptitude tests
with simple criteria of milk composition; stable elements and variable elements on the process
ability of the milk received (repeatability spread over 4 weeks). Based on the results obtained
and the evaluation of the marketability of the raw material; we will define the dairy
recommendations and technological recommendations to implement by indicating the levers
of control of industrial applications necessary to obtain safe and stable dairy products. The
study found that technologically, our milk samples collected from farmers and from collectors
is considered hygienically from a hygienic point of view as highly polluted and may
jeopardize the smooth processing of milk processing operations. , especially during thermal
treatments with a risk of clogging - coagulation of milk on heat exchangers and physical and
biological standardization equipment requiring substantive work ranging from improved
breeding practices, animal health, hygiene, good milking, picking and collection practices to
control the quality and safety of our milk and dairy products.
