Résumé:
The purpose of this works: is the in vitro evaluation of the survival of 9 lactic acid
strains; the strains (A, B, C, D, F, G, H, I) isolated from anchovy and the probiotic
strain Bb12, under stimulated digestive conditions, namely: saliva; gastric juice (pepsin
0.3% PV); 0.1% pancreatin, and 0.3% biliary salt precedence.
The results of the in vitro study of the survival of these strains (A, B, C, D, F, G,
H, I) and Bb12 in the various digestive conditions are interesting, the lactic acid bacteria
tested showed remarkable resistance to hostile conditions of the gastrointestinal tract:
acidity; pepsin, bile salts.
All the strains studied are resisted under simulated digestive conditions, while
there are strains with high resistance and strains with low resistance by supplying the
Bb12 reference strain.
