dc.description.abstract |
This present study consists in assessing the quality of the wheat used in the cereal processing industry, particularly the transformation of soft wheat into flour in the wilaya of Relizane. After learning about wheat flour, physico-chemical and technological analyzes were carried out on imported soft wheat and on flour. Overall, the wheat used during processing and the flour obtained meet the standards set by Algerian regulations.
The second objective is to assess the technological quality of common wheat flour. The results obtained revealed that the flours obtained from soft wheat are of good quality and generally comply with Algerian standards, with the exception of the amylase activity which should be corrected. |
