Résumé:
Milk is a highly nutritious product. Its quality is variable, it is determined by the physicochemical and microbiological parameters which depend on several factors such as breeding, milking, collection, etc. The present study consists in verifying the physicochemical and microbiological quality of three raw milk from the SAYADA region collected by the “GIPLAIT” Mostaganem dairy.
To do this, physico-chemical and microbiological analyzes were carried out considering the following parameters: temperature, pH, titratable acidity, density, fat content, total flora, fecal coliforms, total coliforms and staphylococci.
All the results obtained showed some significant differences between the three milk collected, the differences observed would be attributed to factors related to the breed of the dairy cow, to the diet, to the milking and to the collection of raw milk, as well. than its transport to the company. Nevertheless, almost all of the results conforming to established standards, which leaves us to consider that the three raw milks collected by the “GIPLAIT” dairy are of good quality.
