Résumé:
Wheat is one of the most important and abundant foodstuffs in the diet of Algerians, despite the widespread consumption of this substance, but its supply is not easy, given that Algeria imports wheat in large quantity compared to the local production which does not meet the needs of the Algerian market.
Our main purpose of our work is to focus on wheat, in particular flour from soft wheat and the study of its technological quality and value.
To achieve this objective, we carried out physico-chemical, technological, microbiological analyzes and a market survey to know the expectations and interests of customers in order to determine the different characteristics of the quality of this product marketed by the mills of
«Adda BAkHLOUF - Mascara»
On the whole the results of the analyzes carried out were satisfactory according to the «Algerian» national regulations.
