Résumé:
This work is interested in studying the development of a technological platform in order to master and innovate in the field of dairy technology, in particular the milk preparation processes, its skimming, homogenization and heat treatment (pasteurization and UHT ..), as well as all quality analyzes (physico-chemical, microbiological and sensory of milk and its derivatives). Milk production in Algeria is generally dominated by the milk production system of small farms. The milk comes mainly from cattle and goats with a predominance of cow's milk (approx. 80%). Livestock exploitation, especially milk production, is very unstable. Milk production in Algeria is therefore not sufficient to meet the current market. Part of the economy is therefore intended for the import of dairy products. The problem of food hygiene is important because sanitary conditions prove to be poor during the production, manufacture and marketing of dairy products. Climatic conditions make it difficult to transport milk, and therefore to maintain its quality. But also, the poor quality of the roads as well as the geographical dispersion of the farms which often leads to difficult collection. The purpose of this platform is to provide manufacturers with a certain mastery of manufacturing technologies in milk and these derivatives in connection with energy control and environmental protection. It thus makes it possible to make these skills and its equipment available to companies and technical centers. - train users in platform equipment.
