Résumé:
The work carried out is a preparation for a survey to study Algerian consumer preferences towards Camembert. A survey will be carried out on a minimum of 200 people from the population of Mostaganem at various ages. Those selected will answer an established questionnaire to collect responses to different and complementary objectives. The brand chosen is that of soft camembert-type cheese from the BENI TAMOU “Président” cheese dairy. Our preliminary approach detected in the field if the consumer declares to have a preference for a brand, this does not prevent him from buying other brands when his favorite product is not available, as long as they have the organoleptic characteristics and sensory research.
