The purpose of this study is to evaluate and compare some biological activities of bluefin tuna oil obtained by delipidation of tuna meal by Soxhlet. The first step is to assess the antioxidant activity of tuna oil by the DPPH method. Antibacterial activity is achieved by the agar diffusion method using whatman paper discs impregnated with the test oil. Anti-inflammatory activity was assessed by 3 methods, membrane stabilization method, protein inhibition and denaturation method. According to the results obtained, tuna oil has a significant anti-free radical effect with an IC50 = 0.08 mg / ml and a more or less remarkable antimicrobial effect, it has a modest inhibitory activity against Escherichia coli and Bacillus cereus. , where the inhibition diameter is 11mm. Tuna oil has an anti-inflammatory power demonstrated by the 3 techniques tested.
