Medicinal plants are currently used, tested and selected for their therapeutic values; they are at the origin of many drugs since they contain active principles, which enter in the composition of 70% of pharmaceutical products. The artichoke Cynara scolymus L is a plant of nutritional and medicinal interest and is known for its use in the treatment of functional colopathy. The aim of our work is to highlight certain secondary metabolites (total phenols, flavonoids and tannins) and to quantify them, as well as to evaluate the antioxidant activity of the limbs and leaves of the artichoke CynarascolymusL ; The phytochemical screening of this plant showed its richness in polyphenol, flavonoids and condensed tannins.The quantification of these compounds shows a total polyphenol content of (4,60±0,41mg/ml) in the leaves and (0,670±0,004 mg/ml) in the leaf blades, the flavonoid content ranges from (1,51±0,41mg/ml) in the leaf blades and (0,803±0,002 mg/ml) in the leaves, tannins in turn are omnipresent in the leaves with (1,231±0,05 mg/ml). The antioxidant power denoted through the DPPH* free radical reduction test, shows a value of IC50= (63,058±0,72 mg/ml) /ml in the leaf blades; and (91, 34±2,04 mg/ml) in the leaves.
