Résumé:
The wilaya of Mostaganem represent a major fishing area in Algeria .This specificity
has given for the wilaya a great importance in the national fisheries sector development
strategy and fishery resources, especially for the species of sardines (Sardina pilchardus).
The purpose of our work is to study and evaluate the nutritional quality of the most
common species in the coast of western Algeria during the month of January and May ;
Sardina pilchardus, with a sizeable stock of fisheries resources.
The results of biochemical analyzes confirmed a sample of the fat content of 2013
(11,4g/100g) greater than 2016 (9,11g/100g)those that probably explains the decrease of
plancton in the marine environment may have been linked to marine pollution therefore a loss
in wealth of fish in polyunsaturated fatty acid that enters the prevention of
cardiovasculardisease, in the quotient intelligence of children and in the prevention of several
diseases .on the other hand the protein content is important in the sardine flesh of 2013 in
May (20,44%) , during the same period the average of the sardine protein analyzed this year
2016 isexpressed (18.10%).
The index of TBA is a good indicator of fish rancidity , the results show a value of TBA not
exceeding the threshold with a value of (MDA equivalent 0,49mg / kg vs 0.52 mg equivalent
MDA / kg) in both years (2013.2016) in May respectively which confirms the freshness of the
samples.
