Résumé:
The coffee trees are shrubs of tropical regions of the genus coffea of the family Rubiaceae. Coffee is a stimulating psychotropic energy drink; it is the second most traded raw material in the world after oil and before the wheat; this production represents 4% of the global food trade.
I prepared a questionnaire and we tried to see the population who consume coffee. The questionnaire was given to 100 participants, and the responses are analyzed to give us sufficient results to establish the Algerian consumer profile.
During the sensory analysis of coffee samples it was found that the cafes analyzed present a big difference between them from which it there's some marks of non-quality compared to others, According to consumers.
In conclusion, the coffee destined for consumption is not of a very good quality because he is defrauding by the addition of an additive, which alters the organoleptic quality of this product.
