Résumé:
Village poultry farming plays an important role in life of rural populations. They provide
protein of high quality. The local chicken meat and eggs are highly appreciated by the
Algerian consumer, however, the quality of the eggs is not uniform and it can be influenced
by several factors (age and breed, diet, breeding method and technique, genetic selection ... ).
The present study aimed to compare the quality of eggs from local hens in terms of
composition and conformation with eggs from an industrial strain. Shape index, whole egg
weight, shell weight, pi-I yolk, pi-I albumen were determined.
