Our work is composed of three parts, the first is about the transformation and the determination of the water content of three species of sea cucumbers from the beach of Ben Abdelmalek
Remdane of the wilaya of Mostganem, twenty-one (21) individuals were sampled; six (6) individuals of Holothuria tubulosa B, seven (7) individuals of Holothuria (R.) arguinensis and eight (8) individuals of H. poli. The second paty is the extraction of saponins from the Royal
sea cucumber Parastichopus regalis and the the third is the realization of an online questionnaire on knowledge of sea cucumber and its introduction into the eating habits of Algerian society. According to our results, the studied sea cucumber species have a water content of 80.38%, 84.65% and 63.60% in H. tubulosa, H. arguinensis and H. poli respectively, indicating that these animals are mostly composed of water. According to the results of the questionnaire, more than half of respondents mainly consume small pelagics with a budget between 500DA and 1000Da, nevertheless, almost half know sea cucumbers and 78% confirm that they are able to introduce it to their plate. The sale of sea cucumbers in Algeria is mainly destinated for foreigners (Chinese) or for exportation. The price of fresh sea cucumbers varies from 200DA to 600DA per kilo and 700DA per piece for transformed sea cucumbers.
