dc.description.abstract The consumption of canned sardines is frequent in our country, since it is a more practical product to use and it meets the needs of customers at all levels. For this purpose our internship was carried out in a fish cannery at the level of the company SARL CAPTEN, and this to get an idea on the functioning of this factory, to follow the manufacturing processes of sardines with aromatics and olive oil. olive step by step from freezing, processing, packaging to the marketing of canned food, based on the guarantee of a very satisfactory nutritional quality following a judicious choice of its raw materials and a good mastery of the manufacturing procedure. en_US
