Résumé:
Milk is considered a complete and balanced diet because of its richness in several nutrients
(proteins, lipids, mineral salts, lactose and vitamins).
Our study aims to control the physico-chemical parameters and the microbiological quality of milk,
and for this purpose raw milk samples have been taken at different times.
The microbiological analyzes showed that all samples taken were of acceptable quality, microbial
loads did not exceed the standards required by the Algerian official gazette, and the total absence of
pathogenic germs (Staphylococcus aureus, Salmonella, Fecal and total coliforms and Clostridium
sulfito -reducers) indicate a good microbiological quality of the raw milk.
