Résumé:
The main objective of our work is to study the microbiological parameters of mackerel Scomber
japanicus (Houttuyn, 1782), this fish is an important source of human animal protein. A
microbiological study on 9 samples of the latter ^ fished in the region of Mostaganem, the research
is carried out in the laboratory of our university shows that the presence of bacteria targets the
hygienic quality. The microbiological analysis detected the presence of the following bacteria:
12.107 germs/ml for mesophilic aerobic germs, and 138.104 germs/ml for total coliforms, 5
germs/ml for faecal coliforms, 4 germs/ml for yeasts and .2 germs/ml. for mold. Concerning
pathogenic germs, a suspicion of the presence of Salmonella was detected in two samples and a
presence of Staphylococcus aureu, on the other hand a total absence of Clostridium sulphito
