Abstract:
Gadiformes occupy an important place in world fisheries and are highly sought-after
species. Among these gadiformes, hake (Merluccius merlucccius) Is one of the species whose
fishing has developed considerably in recent decades, both worldwide and in Europe.
For nutritional purposes, this study aims to warn consumers, particularly those suffering
frome disease, So biochemical analyses show That in Merluccius meluccius, lipids vary frome
0.2% to 1.6% and proteins frome 14% to 23%. Dry mater content ranges frome 17.8% to 22.8%,
mineral content forme 0.2% to 1.5% and water content forme 77.2% to 82.4%.
Histologically, we Can see That liver tissue contains hepatocytes with nuclei, and the
heart wall, also know as myocardium, Is made up of cardiomyocytes.
So we Can Say That Our results are perfectly acceptable and in line with standards.
