Oilseeds, such as almond (prunus amygdalus dulcis), are foods rich in oils that are known for their benefits.
The aim of this study is to extract and study the physicochemical properties of prunus amygdalus dulcis sweet almond oil. Extraction by soxhlet (hexane extract) yielded a fat yield of about 30.48 and a moisture content of 4.2 and an ash content of 3.6
The study of the physicochemical characteristics of prunus amygdalus dulcis almond oil was consistent with previous studies in this field. The relative density of our sweet almond oil is 0.914, the refractive index is 1.573, the acid index is 3.93mg KOH/g oil, the saponification index is 193.14 mg KOH/g oil and finally the peroxide index is 4.85 meq O2/Kg oil.
