Medicinal plants are an important therapeutic source around the world. Their consumption is largely based on the popular belief that products derived from them can be safely consumed.
The medicinal use of plants is one of the oldest therapeutic practices.
The consumer we are is becoming more and more demanding in terms of quality: food security and nutritional aspects are at the center of current societal concerns.
Man has always been interested in lipids for various uses: agribusiness, cosmetology, medicine, ... etc. Many seeds are sources of oils, which are increasingly studied for their nutritional and therapeutic properties.
In our work, we were interested in the first part in the extraction of grape seed oil, we approach, after extraction, the different physico-chemical characteristics of the oil, in the second part we were able to verify the power antibacterial grape seed oil. From this point of view, grape seed oil does not exhibit the expected activity.
And in the third part, from a biochemical point of view we tried to valorize grape seed oil by incorporating it into yogurt at different concentrations in order to extend its shelf life (DLC), which was confirmed by The obtained results.
