Résumé:
This work has focused on two areas of research. The first concerns physico-chemical analyzes of
three U.H.T milk brands (candia, ramy and soummam). And the second is the microbiological
analysis of these milks at the level of the microbiological laboratory of the Agronomic Higher
School of MOSTAGANEM.
The results obtained in this study indicate that except for the fat content of Ramy milk 13.2 g / L,
as well as the candia and soummam milk protein content values of 25 g / l and 26 g / l, which is
lower than reported standards. by FAO (2010).
Regarding the averages of the other parameters studied, values equivalent to the standards (PH,
density, fat, protein, lactose) are observed for the three brands of milk.
The microbiological analyzes of all three brands of the studied milk also show a variable load in
the total mesophilic aerobic flora which remains always at an acceptable rate in relation to the
accepted standards.
However, a total absence of fecal coliforms, total coliforms and Staphylococcus aureus was
observed and this for the three brands of milk that are in the standards evaluated at (0 colonies).
So the three brands of milk studied have a good physicochemical and microbiological quality
