ENTRE LE SOL ET LE CIEL : les silos mozabites comme expression de l’adaptation architectural
(université abdelhamid ibn badis mostaganem, 2025) Bougaila Mohamed Rayan
Faced with the growing challenges of food security, sustainable development and heritage preservation, this thesis proposes an innovative architectural response, adapted to the local context of Ghardaïa, in the M'zab valley. The project concerns the creation of a local wheat storage center, combining logistical functionality and architectural expression inspired by local identity. The formal choice is inspired by traditional minarets to ensure a dialogue with the environment and enhance the collective memory. The program also includes a mosque, Mozabite housing, a playground, administration and commercial space, reinforcing the community dimension. A native of the region, the author's approach to this project is one of reinterpretation of heritage, combining cultural heritage and utilitarian contemporary architecture. The dissertation is divided into two parts: a study of the historical, architectural and environmental context, followed by a presentation of the architectural project.

Valeurs nutritionnelles des escargots locaux cuits (Helix aspersa, Petit gris)
    (2025-10-12) BOUZIANE Sarah
This research aims to valorize alternative food resources in response to global food security and malnutrition challenges. Helix aspersa, widely consumed in Algeria, stands out for its nutritional qualities: high protein content, low fat, and rich in essential minerals. The main objective of this thesis is to assess the impact of boiling on the biochemical composition of the snail’s flesh and shell. Results show that cooking concentrates dry matter due to water. Organic matter remains stable, lipids decrease slightly, and proteins show a relative increase due to concentration, upporting its use in agricultural and pharmaceutical applications. These findings emphasize the importance of consuming the cooking broth to retain lost nutrients. Economically, snail farming offers opportunities for rural development, job creation, and export to cosmetic and food markets. This thesis supports the recognition of Helix aspersa a sustainable and strategic protein source for Algeria.

Usage de technologies modernes en apiculture (collecteur de venin automatisé).
    (2025-10-08) KARIMA MOUDJEB; ISRAA LEGAID
Precision beekeeping represents a promising path for the modernization of the beekeeping sector in Algeria. This work aims to assess the current situation of this practice through a statistical study conducted among beekeepers, and to compare the efficiency of two venom collector models: a classical model and an automated model. The survey, carried out via an online questionnaire, collected information on the beekeepers’ profiles, their experience, and their perception of modern technologies. In parallel, an experimental test was conducted on two colonies of Apis mellifera intermissa. The first device, of classical design, uses a fixed-electrode plate connected to a direct current source, while the second, automated one, integrates a microcontroller (ATmega 328P) that regulates voltage, programs the stimulation cycle, and allows remote control via Bluetooth. Statistical results showed a growing interest in innovation, but one hindered by equipment costs and lack of training. Experimentally, the automated collector produced an average of 0.21 g of venom per hive compared to 0.10 g with the classical model, with a significantly lower bee mortality rate (0.001% vs. 0.02%). These results confirm the relevance of precision beekeeping for sustainable and colony-friendly production, while highlighting the need for technical and economic support for its development in Algeria.

L’activité prébiotique des mucilages et des pectines extraits des grains de fenouil : Applications alimentaires dans les formulations de yaourts fonctionnels.
    (2025-11-06) MEKKI Rachida
The objective of this study was to evaluate the effect of adding mucilages and pectins extracted from Foeniculum vulgare seeds as natural additives on the physicochemical quality, stability, and microbiological characteristics of a functional yogurt enriched with probiotics. The yogurts were prepared from cow’s milk following a standard fermentation process and divided into several experimental batches supplemented with increasing levels of fennelextracts. Physicochemical and microbiological analyses were carried out during storage at 4°C for 15 days. The results revealed that the incorporation of fennel mucilages and pectins stimulated the growth and viability of probiotic bacteria while maintaining a stable pH ranging from 4.4 to 4.6 and a progressive increase in acidity reaching about 97 °D, indicating a controlled fermentation and good product stability. The addition of these extracts also improved yogurt texture and viscosity, ensuring better consistency during storage. Microbiologically, the fennel extracts inhibited the proliferation of undesirable microorganisms while promoting the growth of beneficial lactic acid bacteria, confirming their role as natural prebiotics. These findings highlight the potential of fennel-derived mucilages and pectins to enhance the quality, stability, and functional value of probiotic- enriched yogurts, providing a promising base for the development of healthy and innovative dairy products.
