The present work aims to evaluate the antioxidant activity of the enzymatic hydrolyzate obtained from the bluefin tuna (Thunnus thynnus) co-products, fished in the region of Mostaganem, and this by two tests: the total antioxidant activity (TAC) and the DPPH free radical scavenging test. As well as a study of antimicrobial potency by AWDT well diffusion method against four bacterial strains and two fungal strains: Staphylococcus aureus, Escherichia coli, Pseudomonas sp, Aspergillus niger, Bacillus cereus et Candida albicans. In the TAC test, the enzymatic hydrolyzate showed a considerable antioxidant activity exhibited by its maximum absorbance which is of the order of 139 μmol / mg, likewise in the DPPH test with an antiradical activity (71.32%) . The results of the antimicrobial activity are expressed by the diameter of the zones of inhibition which showed an antibacterial and antifungal activity against the majority of the strains by a considerable inhibitory activity vis-à-vis the pathogenic strains tested, it appears that: the Aspergillus niger strain is the most sensitive against the hydrolyzate with an inhibition diameter of 21.5 ± 2.12 mm. While no inhibitory activity was recorded from the Candida albicans strain which appears to be the most resistant strain. The results obtained reveal an important antimicrobial and antioxidant effect of the enzymatic hydrolyzate and thus have proved the effectiveness of the enzymatic hydrolyzate against pathogenic germs which shows that the latter has biological properties for a therapeutic application. |
