dc.description.abstract The aim of our work was the isolation and identification of lactic acid strains from the gastrointestinal tract and the flesh of marine fish: anchovies (Engraulis encrasicolus). After their isolation, the strains were characterized and identified by physiological, biochemical and technological methods. The eight isolated strains were evaluated for their ability to withstand digestive conditions, and for their inhibitory power against five pathogens. The results of this study have shown that lactic strains, isolated from Engraulis encrasicolus, resist and survive simulated digestive conditions and have a good inhibiting power. Indeed, these strains are capable of inhibiting the growth of Escherichia coli, Pseudomonas aeruginosa, Bacillus cereus. But, the inhibitory effect of these strains was less important against staphylococcus aureus and absent against Candida albicans. en_US
