dc.description.abstract |
The aim of this study is to develop a bioactive biodegradable film based on starch and gelatin for food preservation. Starch was extracted from potato and corn, and gelatin was obtained from the chicken feet. Yields of 34.5, 16.28 were obtained in starch extraction from maize and potato, respectively; and 12.85% for gelatin. Multiple films were developed with different concentrations of starch, gelatin and glycerol. Thickness, opacity, moisture, solubility in water and water vapor permeability of these films were evaluated. According to the obtained results, two films were selected, a plasticized film composed of cornstarch and gelatin in a ratio of 2: 1, and an edible coating was also chosen with 1/1 of these components. These two films were supplemented with 0.25 mg / mL of quercetin to form a biodegradable bioactive film. A cherry fruit packaging test allowed us to validate the performance of these packaging which kept the fruit intact for six days. |
