dc.description.abstract |
Oxidative stress is the cause of various chronic human diseases. It is caused by an increased activity of reactive oxidizing species (ROS) by the oxidation process. The objective of this work is to study the antioxidant potential of certain lactic acid bacteria. The strains were tested for their ability to scavenge free radicals by 2,2-diphenyl-1 picrylhydrazyl (DPPH), and their anti-lipid peroxidation effect. The results obtained by different researchers indicate that L. curvatus and L. paracasei have excellent DPPH scavenging activities (59.67% ± 6.68%) and inhibition of lipid peroxidation, in addition L. plantarum and L. mesenteroides have good antioxidant properties, also antioxidant capacity has been found for intact cells and intracellular extracts of intestinal bacteria B. longum and L. acidophilus in vitro with levels ranging from 43.2% to 52.1%. |
