In the dairy industry, reconstituted milk must meet highly satisfactory standards and health requirements justifying its good quality from a nutritional, organoleptic and hygienic point of view. The objective of this work was to assess the physicochemical and microbiological qualities of the reconstituted milk produced at two dairies in Mostaganem province.
A set of physicochemical (density, acidity, pH and dry matter content) and microbiological analyzes (search for total mesophilic aerobic germs at 30 °C and for enterobacteriaceae, including salmonella) was carried out at the regional veterinary laboratory of Mostaganem on samples of reconstituted milk.
The results of this study demonstrated the total absence of enterobacteriaceae including pathogenic bacteria such as Salmonella. However, they showed the presence of total mesophilic aerobic bacteria at 30 ° C in all the samples tested with a low count which varies between 1100 and 1800 CFU/ml. The physicochemical analyzes demonstrated that all the samples analyzed presented an acceptable physicochemical quality with regard to density and total dry extract. However, almost all the samples analyzed showed pH values less than 6.5 and an acidity greater than or equal to 18 °D.
In conclusion, reconstituted milk must be systematically analyzed before its commercialization in order to ensure to the consumer a healthy product of a satisfactory quality. |
