dc.description.abstract In this study, three different areas :Neck ,Breast and leg from five fresh red meat caracass (sheep) from Mostaganeme conved market served to sampling .the microbilogical control done by enumeration was performed for total aerobic mesophilic flor , fecal coliforms and pathogenic bacteria (Escherichia coli ,staphylococcus aureus : Clostriduim sulfito –reducers and salmonella )microbiological analysis was performed by stock solution and decimal dilution preparation for enumeration results for FTAM were compliant to the standards set by the Algerian Official Gazette No. 39 (July 2, 2017) for the microbiological control of meat by opposit to the fecal coliforms that are above the standard . low quality of meat was confirmed by the presence of food poisoning bacteria : salmonella, E.coli and staphylococcus aureus which are responsible for food poisoning. en_US
