Sidr honey is also a treasure of nature endowed with numerous benefits. It is rich in secondary metabolites, particularly phenolic compounds, responsible for its biological activities. For these reasons, this natural product was the subject of our study, in order to evaluate its antioxidant activity in vitro. Analyzes, physicochemical (Humidity, pH, Free acidity, Electrical conductivity, Degree of BRIX, Hydroxy-methyl-furfural (HMF), Absorbance), qualitative and quantitative phytochemicals were carried out for two samples of honey which were collected on two different sites in Algeria (wilaya of Ghardaïa and Jijel) and a sample from Senegal, the Dakar region. The antioxidant activity of these samples was evaluated by three methods: iron reduction FRAP and free radical scavenging DPPH and ABTS•. Fourier Transform Infrared Spectroscopy or (FTIR) carried out the identification of functional groups. The results of the physicochemical analyzes demonstrated differences between the honey samples studied, but all were in compliance with international standards, the phytochemical study revealed the presence of secondary metabolites with different intensities. Proven to be rich in polyphenols, flavonoids, tanins. Positive correlations were observed between the amount of total polyphenols and antioxidant power. According to the results obtained by the FTIR, we identified the presence of the functional groups amides R-CO-NR2 Ketones R- (C=O)-C=C-NH2 alcohols R-CH2-OH. These results highlight the beneficial properties of precious Sidr honey and highlight its potential as a protective agent against oxidative damage. |
