dc.description.abstractThis research work has made it possible to study certain properties of honey in the beni chougrane region (mascara). physical-chemical properties :pH (between 4.03 and 4.50),conductivity (between 0.28% and 0.44 %),HMF(between 11.26 and 14.15 mg/kg),refraction index (between 1.28% and 0.44 %),the pollen properties concerning the qualitative and quantitative ;analysis of pollen grains : Honey 1 , Honey 2 and Honey3 are multi floral, as well as the bacteriological properties :absence of yeast and mold, then sensory evaluation of each sample collected. Their comparison by contribution to international standards in order to get an idea on the quality of honeys studied analyses. All the results obtained show that the different honeys produced at the level of the selected regions are good hygienic, sanitary and market qualityen_US
