Abstract

The aim of this work is the in vitro prebiotic effect of different carbohydrate substrates on lactic acid strains growth of the genus Lactobacillus plantarum isolated from cow's milk. Planned experiment for this study consisted on the use of carbohydrate substrates (inulin, pectin, etc.) as prebiotic to improve growth of our strains and lactic acid production. The analyzed scientific articles demonstrate that, among the prebiotics widely studied and able to improve bacterial growth and acidity (Inulin, Pectin, Oligofructose…etc.), inulin is the most used and most effective prebiotic for many species of probiotic lactic acid bacteria; particularly (Lactobacillus acidophilus La-5 and Bifidobacterium animalis Bb- 12).
