dc.description.abstractShrimp by their High nutritional value and exceptional gastronomic quality of their meats are among the most exploited seafood. Fishing of this resource continues to grow with a current production of around one million tonnes per year. To this end, the present work, performed in the Mostaganem region is to contribute to the study of analysis of co Aristeus antennatus, determining the biochemical composition of the shell and isolating chitin and also d study the microbiological analysis of the latter. The results showed that the Aristeus antennatus shell is composed of protein, respectively (17%), ash (20%), fat (3.3%), and chitin (15.88%). As for chitin, it is composed of protein (1.13%), ash (2%), and fat (0.3%). Furthermore, it has been determined the antimicrobial capacity of the chitin against two pathogenic strains (Gram Gram +). About the biological properties of chitin, we assessed the growth kinetics of two Lactobacillus bulgaricus strains and Escherichia coli in both MRS and TGEA environments. It is observed that the bacterial growth of E. coli and lactic acid bacteria in the culture media decreases dramatically contact chitin, by cons they survive in shrimp waste.All these results show the benefit of using chitin, the latter has an antimicrobial power. The results we obtained show that the shell has -chimiques physical properties that suggest its operation in several areas such as agriculture, food, medicine, pharmaceuticals, packaging cosmetics, textiles and Wastewater.en_US
