dc.description.abstractIn order to make available to the consumer a variety of good quality milk and to ensure the manufacturing of products of satisfactory quality, physico-chemical and microbiological analyzes are systematically carried out in the milk production firms to verify the conformity of the milk quality to the standards. To this end, our study was part of the monitoring of the main methods of physico-chemical and microbiological analysis . On this subject, I would like to draw your kind attention to the period of the practical training course that we could not start it because of the COVID-19 pandemic that affected our planet. Following this, it was planned to carry out our work through the following studies: In the physico-chemical study, we measured temperature, pH, density, acidity and fat, and in the microbiological study, we were interested in counting bacteria, namely Total Aerobic Mesophilic Flora, Total and Fecal Coliforms, Staphylococcus aureus. Following this, I would like to inform you that the results of the theses give us the following information: - The parameters of the physico-chemical analyses are in conformity with the standards as mentioned in the official journal of the Algerian Republic, except that the pH of raw milk from day 1 is below the standard (Ph = 6.55). - The microbiological analyses also show a variable load in the total mesophilic aerobic flora which always remains at an acceptable level compared to the accepted standards. However, a total absence of Fecal Coliform, Total Coliform and Staphylococcus aureus was observed in all three samples are in the standards evaluated at 0 colonies, except that the fecal coliforms of raw milk exceeds the Algerian standard set ( 5.2 .103 ). According to this study, the three types of milk represent a good physico-chemical and microbiological quality, and pasteurization is effective in eliminating pathogens.en_US
