Abstract

Natural proteins represent an important source of bioactive peptides with diverse biological properties, particularly anti-inflammatory activity. This study aimed to extract proteins from the edible snail Helix aspersa Müller, produce bioactive peptides through enzymatic hydrolysis using pepsin, and evaluate their anti-inflammatory activity. Protein content was determined before and after hydrolysis using the Lowry method. The anti-inflammatory activity of both the protein extract and the hydrolysates was assessed in vitro by the protein denaturation inhibition assay. The results showed that the protein extract exhibited an anti-inflammatory activity of 50%. These findings highlight the potential of Helix aspersa Müller as a natural source of bioactive peptides with promising applications in the food, nutraceutical, and pharmaceutical industries.
