Abstract
Chitosan is prepared from chitin, it is primarily composed of glucosamine residues and N-acetylglucosamine with a 1,4-β bond. It can be obtained by deacetylation of chitin produced from shells of crustaceans, insects and other sources. Chitosan is a non-toxic, biodegradable and biocompatible natural polymer and can be used in many applications, such as biomedicine, pharmaceutical, cosmetics, etc.
In this study, we are interested primarily in the extraction of chitin from the head and shell of the red shrimp Aristeus antennatus, and its conversion to chitosan by different extraction methods. The biochemical properties were also calculated by numerous analyzes leading to an estimated rate of 13.12% protein, 9.2% lipid, 14.80% ash and 9% moisture.
We also studied the antibacterial behavior through two methods: well and disk diffusion. The results obtained reveal a significant antimicrobial effect demonstrated by a diameter of inhibition at the level of several bacterial strains. A set of tests was also developed in the context of the determination of the antioxidant power of chitosan and the results obtained proved the effectiveness of chitosan against pathogenic germs
