dc.description.abstractThis work aim to evaluate the antioxidant potential of eight strains of lactic acid bacteria, including six newly identified strains of lactobacilli and two control strains BB12 and the LBE strain (Lactobacillus rhamnosus). The reducing power which consists in reducing the ferric iron Fe3 + to ferrous iron Fe2 + , the scavenging capacity of free radicals by the DPPH test and the anti lipid peroxidation test, are studied . The results showed a significant reducing power strains ranging from 34% to 71,4%. the strains capacity to trap DPPH and the levels varied between 59,2% and 90,4%. Finaly, all the strains exhibited an anti-lipid peroxidation effect with a maximum level of 70,5% and a minimum of 17,5%.en_US
