dc.description.abstractThe objective of this study is the valorization of the dates rejects of a cultivar very answered the date waste in adrar wilaya, the rejects of Hmira variety by a biotechnological process: such as the production of vinegar. The study carried out related to the physicochemical analyses: the morphological description of rejects (length, weight, size, and color), chemical analyses (tenure out of water, pH, ashes, element minerals and acidity) and biochemical analyses (total sugars). A fermentation aerobiosis and anairobiosis was carried out by sowing the must of date rejects by the yeast stock S.C from date rejects “Hmira”. And mout without S.C The production of vinegar, the evolution of pH and the sugar consumption were evaluated. Results obtained watch that must rich in total sugars 75% and acidity 4,24% - 4 ,44%.en_US
