dc.description.abstractIn this study, three culture media were developed (PD, ND and NL) based on locally available plant materials with a low market value, namely (Mech Dagla dry date) and agro-industrial waste (nuclei of date). The lenses were added to the culture media in order to overcome the protein deficiency. This study made it possible to upgrade these waste on the one hand and to obtain a culture medium less expensive compared to the reference medium MRS which is a favorable medium for the growth of lactic acid bacteria on the other hand. Four beneficial lactic strains were used (Lb-P, Lb-A, Bb12 and Bb443). In terms of their growth kinetics, there is no significant difference (p <0.05) between PD and MRS. The most important biomass is obtained on the MRS and PD media with a value of 14.39 and 17.35 log CFU / ml respectively, low on NL medium and negligible on ND medium. The amounts of total sugars and proteins in the fermented media were satisfactory. According to the pH evaluation kinetics, the two media ND and MRS are similar and all the strains tested have a fast acidifying capacity on these media.en_US
