Etude paramétrique d’étiquetage et de la traçabilité des denrées alimentaires

Abstract

Consumer attitudes towards the nutritional aspect of food are increasing rapidly. In this context, food product labels play an important role in providing relevant nutritional information to consumers. This study was conducted with the aim of identifying important aspects of nutrition labelling that consumers would consider at the time of purchase. The ultimate goal was to draw conclusions that provide important information for food processors on consumer behaviour regarding the nutritional aspects of foods and purchase intention. So, the study of this work is based on the identification of labelling and the traceability of foodstuffs, being devised in two parts. A theoretical one bringing together the various theoretical information concerning labelling and traceability of foodstuffs based on the regulations in force. The second part concern the study of labelling of a dozen (12) food products exposed on the market, based on direct observations of the information found on the label and to see if it complies with the regulations in force, the anomalies observed and the results of which turned out to be unsatisfactory, which testified to negligence in the application of the regulations by the producers, by posing problems in the operation of monitoring the traceability to detect the real causes in the event of a health crisis. From this perspective, it would be necessary to impose a strict control on the labelling of foodstuffs especially pre-packaged, so that the consumer is informed to be able to choose the product, according to his desire and his state of health on the one hand and the possibility to make a trace for each food item on the other side.
