Abstract

Twenty four lactic isolates were obtained from ewe and goat, cow's milks from area of the province of Relizane ; to studies a favorites factors to the developement of some stocks of lactic bacteria. The identification was made by many microbiological tests that led to the determination of the differant species and genera.. Data obtained showed predominance of cocci among lactic isolates (75%) while lactic rods represented only (25%) . This distribution is influenced by a combination of several factors: practices of breeding, climate, the origin and the animal race.
