dc.description.abstractBunium bulbocastanumis a medicinal plant that belongs to the Apiecea family used in traditional medicine. The main objective of this study is to determine the physico-chemical characteristics (ash content and humidity), evaluation of bioactive substances, particularly polyphenols, flavonoids and condensed tannins as well as an evaluation of the antioxidant and antimicrobial activity of the tuber extract of this plant from the region of Sidi Ali (Mostaganem) and Ammi moussa (Relizane). The physico-chemical results obtained show that the Mostaganem sample is marked by a high ash content1.34percentage. On the other hand, the Relizane sample is marked by its high moisture content of 13.10 g/100. The highest level of polyphenols is found in Mostaganem extract (11.65Amg EAG/g of extract) and in tannins (1.30 mg EAC/g extract). Relizane extract is shown to have the highest flavonoid content (9.421 mg EQ/g extract).en_US
