dc.description.abstractThe co-products of the sea represent valuable biological resources that can generate different molecules of nutritional and biological interest. The objective of the study is to extract protein fractions by acid proteolysis from the co-products of the red shrimp Aristeus antennatus (Risso, 1816), fished in the Mostaganemoise region. Soluble and insoluble compounds by enzymatic hydrolysis are then identified and quantified. The study of the biochemical composition of shrimp coproducts is composed respectively of protein (13.12%), ash (14.89%) and lipids (9.2%). The results obtained showed that the chemical composition of the protein hydrolysates is rich in proteins and ashes in the soluble fraction (supernatant), unlike the insoluble fraction (pellet) which is rich mainly in lipid.en_US
