dc.description.abstractstudy was carried out in order to identify the microbial ecosystem found in fresh honey from the Mostaganem region. We were responsible for characterizing the lactic flora in the shape of bacillus. The revitalization and cultivation tests of lactic isolates were carried out on MRS medium. The study of morphological traits, by microscopic observation, confirmed the evidence of a single form that of bacillus. Identification tests (biochemical and physiological) identified 25 strains of lactic bacteria that belong to the genus Lactobacillus. The strains identified phenotypically have been retained for molecular identification and technological aptitude tests.en_US
