Etude Morphogénétique des performances bouchères chez les veaux nés de vaches laitières de race prim’holstein au niveau de l’abattoir de SAIDA

Abstract

The objective of this work is to study the meat performance of calves born of prim'holstein dairy cows and to set certain morphogenetic values to assess the efficiency of fattening by taking certain barometric measurements. This work was done at the Saida slaughterhouse on males selected according to their mothers they were all born from prim'holstein dairy cows and fattened at a fattener or at the breeder and directed towards the slaughterhouse after restraint and taking measurements on live animals and weighing hot carcasses to calculate carcass yields.The results obtained in this study show an average live weight of 423kg; an average carcass weight of 250.5kg, therefore an average yield of 46.9. Barometric measurements indicate averages of 1.41m for scapulo-ischial length; 2.01m for chest circumference; 1.5m for height at withers and 36.88cm for scrotal circumference. The population studied represents an average age of 18.77 months. These results have allowed us to take a morphogenetic approach to this population intended for slaughter and consumption; to determine its main meat characteristics and to propose ways of improvement and this population whose genetic performance of their mothers is no longer to be demonstrated.
