Abstract

A set of physicochemical parameters of milk was the subject of the study we conducted in the region of Relizane, considered as a dairy basin in northwestern Algeria, including: average milk production, acidity, matter fat, protein level, lactose level, density, pH and freezing point and highlight the influence of epigenetics on these parameters. In the light of the results obtained, it has been found that one liter of Montbéliarde milk contains on average 39.5 g / l of fat with a density equivalent to 1031.5. The protein level varies between 31.48g and 30.17g and the lactose content varies between 45.45g and 44.17g. As far as the Prim'Holstein race is concerned, one liter of milk contains on average 35 g / l of fat with a density equivalent to 1031.31. The protein content varies between 30.91g / l and 30.28 and lactose content varies between 45.51 and 44.94 g / l, the average daily production is 14 l / d.
