Abstract

The aim of this work is to study the influence of gender and genotype on meat quality and to evaluate the effect of the incorporation of natural substances on oxidative stress meat The study involved a sample of 27 rabbits sexed on two different genotypes (Giant and Butterflies) aged 38-40 days. The results show that the lipid content is higher in males compared to females. Male rabbits of both genotypes have smaller proportions of manoldialdehydes and protein compared to females (0.81% vs. 1.23% for MDA). The addition of natural plant in different percentage has significantly reduced the MDA content of meat in both genotypes.
