dc.description.abstractA questionnaire survey was carried out among 100 people in the municipality of Ghassoul in the wilaya of El Bayadh, in order to understand consumption preferences towards local dairy products. The questionnaire included 22 questions to gather informations on demographic and social variables, perceptions of dairy products, and consumption preferences of traditional cheeses. The results show that the local consumer is fairly familiar with these products and displays consumption habits specific to the region. The selection criteria are mainly related to the quality of the product, the taste and the origin of the animal milk. Although quality stability and high prices are to be regretted, the local consumer is largely satisfied with these products.en_US
