The inflammation is a set of reactions generated by the body in response to a sustained assault. It can be of foreign origin as an injury, infection, trauma, or come from the inside of the body itself as in autoimmune diseases. Many plants are known for their use in traditional medicine for the treatment of several diseases including diseases inflammatory component. Our research has focused on the inedible date (kernel) part of the fruit of the date palm Phoenix named l. variety Deglet-Nour of Algerian origin. The focus of our study is to find a scientific basis for the use of date kernel in the therapeutic field. It is based on two stolen; the first is the preparation of aqueous and Keto dates nuclei extracts followed by qualitative phytochemical analyses which allowed to highlight several secondary metabolites, this analysis has been supplemented by a determination quantitative phenolic flavonoids and totals, the second concerns the assessment of the anti inflammatory activity of the extracts in vivo. A histological study is conducted at the end of this experiment. The anti-inflammatory activity was assessed by measuring the edema induced by carrageenan a1% at the level of the sub-plantaire part of the leg of the NMRI mice. Results the percentage of inhibition of edema of the leg of treated mice with the aqueous extract and the Keto extract in 100, 200 and 300 mg/kg were disclosed a significant increase compared to the mice treated with Diclofenac® 50 mg/kg After the injection of the carrageenan. The cutaneous tissue of mice paw histopathological results confirms the anti-inflammatory effect of two Keto from the inedible part of dates and aqueous extracts. This experimentation allows us to affirm the anti-inflammatory activity of the two extracts of kernel (DegletNour) date of Algerian origin, according to the conditions of our study.en_US
