Résumé:
The objective of our work was the isolation and identification of lactic strains from the gastrointestinal tract of marine fish: sardine (Sardina pilchardus). After isolation, the strains were characterized and identified by physiological, biochemical and technological methods.
The six isolated strains were evaluated for their inhibitory properties against five pathogenic germs. The results of this study showed that lactic strains, isolated from Sardina pilchardus, have good inhibitory power. These strains are capable of inhibiting the growth of Escherichia coli, Pseudomonas aeruginosa, Bacillus cereus.However, the inhibitory effect of these strains was less important against Staphylococcus aureus and absent against Candida albicans.
